Slowly, slowly, the snails from 'Che Lumaca!' in Colloredo di Monte Albano have also arrived ... just in time to reinvigorate us in these first decidedly autumnal days.
We made them into our famous 'CAIS' alla friulana with a good polenta made from our own stone-ground flour from the Cojutti Mill in Godia. The recommend pairing is with the Super-Tazzelenghe produced by Conte D'Attimis Maniago.
